Cheese and Chive Dampers


These were so good just warm out of the oven! I think I ate about 3 and a half of them ahaha!

3 cups self-raising flour
1/2 teaspoon salt
1/4 cup finely chopped chives
50g chilled butter
1 cup grated cheese
1 1/2 cups beer

Preheat oven to 200 degrees Celsius fan-forced. Grease a biking tray. Combine flour, salt and chives in a large bowl. Rub in chopped butter to make fine crumbs. Stir in cheese.

Make a well in the centre of the flour mixture. Add beer, stir until mixture starts to come together. Using you hands, bring together in the bowl. Turn out onto a lightly floured surface. Divide into 6 even portions (or into more portions for smaller sized dampers like I did). Shape each portion into a ball and place on the prepared tray. Score the top of each ball with a knife. Bake for 20 minutes or until bread is golden and sounds hollow when tapped on the base. Serve warm.
